Enterprise Starship Variety Show

WOW is all I can say!! I have never seen the Enterprise High School Starship perform before, and I was amazed at their talent and energy. They put on a FANTASTIC show on Friday night. Of course, the highlight was seeing Preston rock out on the drums!! :0)

What a great evening -- dinner at In-n-Out, an entertaining show, time spent with friends, and a "date" with my favorite son, my friend Becky and her boys!!

Thanks Becky, Garrett, Yutaro, and Lyle for a fun-filled evening!

Congratulations, Hilary and Ethan!

On behalf of Shasta College, I would like to congratulate those who met the requirements to be placed on the Dean's List.

To qualify for the Dean's List, students must complete a minimum of twelve hours of credit courses and earn a G.P.A. of 3.5 or higher each semester. Each of these students has demonstrated inspiring commitment and academic perseverance. We applaud these scholars on achieving this impressive distinction.

Feelin' the Love

Valentine's Day is my most favoritest (is that a word?) holiday!! Maybe it's because my favorite color is red, and my second favorite color is pink. Maybe it's because I love romance. Maybe it's because I love mushy cards. Maybe it's because I love flowers. Maybe it's a combination of all these things.

My dear friend, Carmen, showed up at my door on Valentine's Day with some "goodies" for me. I was sooooooo excited, and I was really feelin' the love!

with cream cheese frosting!!
They were delish!!!!

The Big Snow of 2011

After reading your blogs and seeing pictures of the snow storms in the south and back east, I just had to show everyone what a Redding, California "snow storm" (if you could even call it a storm) looks like. The headline at Redding.com today reads, "North state endures heaviest snowfall in 8 years".

So, here's the pictures of our "snow storm":

I worked all day Thursday, and much to my disappointment, it did not snow one little tiny flake in Anderson. I love to watch the snow coming down. But, it was a beautiful sight to come home to last night after work.

It amazes me that snow can make an "ugly" side yard full of car parts beautiful. Loved this picture:

It reminded me that the Lord can take the "ugliness" in my life and make it beautiful!

There's A Sucker Born Every Minute

P.T. Barnum once said, "There's a sucker born every minute." Well, he must have not been referring to these suckers; they take two nights. :0)



When my kids were young, I made chocolate suckers for every occasion and holiday. They LOVED them (and still do). But, I haven't been asked to make suckers for many years. Lyle is a Teacher's Assistant for 5th grade, so he asked if I could make 60 suckers (there are two 5th grade classes) for Valentine's Day. No problem! Then it was, "While we're at it, could we just make another 28 for my class?" No problem! Well, one thing lead to another, and I ended up making 110 chocolate suckers.

It has been also been soooo many years since one of my kids have came home with a pouch filled with Valentine's. Those sweet 5th graders filled his pouch with cards and lots of candy. How nice to be loved!!!

Free Concerts

Sometimes while I'm cooking or after dinner while I'm cleaning up the kitchen, I get a free concert. The pianist even takes requests! I sooooo enjoy hearing Ethan play the piano. I wonder if Mom Jones is smiling from Heaven, happy to finally have someone playing her piano again! :0)

Strange (But Delicious) Recipe

Place a chuck roast in the crock pot on low. Sprinkle one packet of Hidden Valley Ranch Salad Dressing Mix over the roast. Sprinkle one packet of McCormick Au Jus Gravy Mix (or you can just use McCormick Brown Gravy Mix) over the roast. Place a stick of butter on top of the roast. Put 4 or 5 pepperoncini peppers on top on the roast. (These are the kind of peppers that you see at a salad bar.) Cook for at least 8 hours. DO NOT ADD WATER!!

This is sooooooooooo good!! I made this last week, and my family just LOVED it!! I know it is strange, but it is soooooo delicious! Try it, you'll like it! :0)
